Apple Pie Buckwheat Pancakes
Prep: 10 min
Cook: 5 min
Yield: Serves 1 (3 pancakes)
Ingredients:
- 1/3 cup buckwheat flour
- 2 tsp cinnamon
- 1 tsp baking powder
- ½ tsp sugar
- 1/3 cup plus ¼ cup milk of choice (I used almond)
- 2 TB unsweetened applesauce
- 1 tsp vanilla extract
- ¾ cup finely-chopped apple
Cheddar, Bacon, and Jalapeño Muffins
Directions:
- Spray a non-stick frying pan. Add dry ingredients (flour, cinnamon, baking powder, sugar) in a bowl and whisk to combine.
- Add wet ingredients (milk, applesauce, and vanilla) to the bowl and mix until just combined. Fold in the apples.
- Drop-in blobs onto the frying pan and cook on medium heat. Flip when bubbles form on the surface.
Serving Suggestions: Top with butter/margarine, maple syrup, peanut butter, honey, or even some applesauce for a healthier spread. You can make the batter the night before (I did) minus the apples, and just chop them and add them to the batter in the morning for a quick breakfast. Freeze any leftovers in a ziploc with layers of parchment paper in between and pop them in the toaster for another quick breakfast.
