Apple Pie Buckwheat Pancakes

Prep: 10 min

Cook: 5 min

Yield: Serves 1 (3 pancakes)

Ingredients:

  • 1/3 cup buckwheat flour
  • 2 tsp cinnamon
  • 1 tsp baking powder
  • ½ tsp sugar
  • 1/3 cup plus ¼ cup milk of choice (I used almond)
  • 2 TB unsweetened applesauce
  • 1 tsp vanilla extract
  • ¾ cup finely-chopped apple

Cheddar, Bacon, and Jalapeño Muffins

Directions:

  1. Spray a non-stick frying pan. Add dry ingredients (flour, cinnamon, baking powder, sugar) in a bowl and whisk to combine.
  2. Add wet ingredients (milk, applesauce, and vanilla) to the bowl and mix until just combined. Fold in the apples.
  3. Drop-in blobs onto the frying pan and cook on medium heat. Flip when bubbles form on the surface.

Chocolate Whipped Cream

Serving Suggestions: Top with butter/margarine, maple syrup, peanut butter, honey, or even some applesauce for a healthier spread. You can make the batter the night before (I did) minus the apples, and just chop them and add them to the batter in the morning for a quick breakfast. Freeze any leftovers in a ziploc with layers of parchment paper in between and pop them in the toaster for another quick breakfast.
