This summer green salad is full of texture, cream, and crunch. With only five minutes of prep, it makes a fantastic lunch and is so fresh tasting you’ll be begging for more.
My mom taught me well in the salad department. Full of creativity, she’s been making salads sparkle since as far back as I can remember. When I was old enough to eat dinner at a friend’s place for the first time, I stared in shock at the romaine lettuce and tomatoes weeping in the tiny bowl in the middle of the table. The fixings are what make salads so inviting. Doesn’t everyone know that?

Soft, perfectly ripe avocado and creamy goat cheese will melt in your mouth. Crunchy romaine and cucumber provide a fun texture contrast. This is why the dressing is simple: lime juice and olive oil.
Don’t forget to eat your salad with chopsticks. It’s easier, trust me, and this way you don’t have lettuce pieces spilling all over your face. I’ve been eating salads wrong all my life.

Crunchy Green Salad

A fresh-tasting summer salad filled with the crunch. The dressing is simple light because the avocado and goat cheese add wonderful creaminess and flavor to the salad. To make vegan, omit the goat cheese and substitute with cashews.
- [i]The Salad[/i]
- 2 cups romaine lettuce, chopped roughly
- ½ an Avocado
- 1/3 cup cucumber, cubed
- 1 stalk celery, chopped roughly
- 1 TB Goat Cheese, crumbled
- handful fresh basil
- [i]The Dressing[/i]
- lime wedge
- 1-2 tsp extra virgin olive oil, to taste
- Combine all salad ingredients in a medium-sized mixing bowl. Squeeze a wedge of lime over the salad and add the olive oil. Toss and serve
