Palette Dining offers a contemporary multi-cuisine style of la carte dining. Inspired by the provenance of the Blue Mountains and Greater Sydney, articulated through the creative lens of head chef Petrina Kerr.
The Palette menu is seasonally driven and influenced by the array of producers and market gardeners whom supply our kitchens. We actively nurture our own rooftop garden site where we grow our kitchen herbs, heirloom vegetables and also house ~20,000 bees across two hives.
With 2 bars and a casual lounge area, we are also well suited for group functions and special occasions.
The Palette Dining menu reflects a strong emphasis on seasonality and locality.
We are philosophically and practically aligned to the slow food movement. Most of our core ingredients are sourced from within the abundance of the greater blue mountains region and the best producers throughout Australia.
The Palette Dining wine list has been designed to pay homage to the history of wine and provide a window to where it is heading.

In 20 years as a chef, I’ve seen how a great plate of food can be both an artistic statement and nourishment for the mind and body. Palette Dining has afforded me the opportunity to ignore all the nonsense, trends and ego’s in our industry and just put up good food each night to our patrons who share my vision of ethically and sustainably sourced produce treated simply with love and attention.
After years of working in 5 star hotels and hatted Sydney restaurants, meeting celebrities and enjoying the bright lights, Palette Dining is a refreshing change. Honest, simple, beautiful food paired with exquisite wines from our local region and the best of Australia and executed with relaxed yet attentive service.
