“Easy weeknight dinners” sounds like an oxymoron. There have been way too many times where I’ve seen lists of “weeknight recipes”, gone through the ingredients and steps, and thought, “What? Are these people robots?“. I don’t think I need to tell you that weekdays are hard and that all you really want to do is curl up with your dog and order Chinese. I’m certainly not suggesting that you should plan to cook a week’s worth of entirely new “easy” recipes. We all know that when trying a recipe for the first time, it is not as simple as it looks.
I am, however, suggesting that you slowly include some of these meals in your go-to-dinners repertoire. I’ve read the directions and ingredients for all the recipes. They’re all vegan, and many of them I have personally made myself (or some variation of the sort). The first time you cook these meals will likely be uncomplicated, and if they become frequent meals in your household you’ll probably find yourself not even needing the recipe on the second or third go. So, have fun with it, and know that when cooking dinner, ingredients never need to be exact.
