This sandwich is what happens when you “grow up” and still want a grilled cheese sandwich but your tastes have changed and become slightly fancier and you actually LIKE blue cheese now so you make this.

I’m spending today in a packing frenzy as I’m about to leave on vacation to Hawaii! Does anyone else feel like the older they get, the more stressful it is to go on vacation? It seems like my to-do list before leaving is never-ending, and things I might forget to bring with me keep popping into my head at three in the morning.

When I went to Hawaii three years ago, just before the start of my blog, I forgot my camera. Of all things. I was lucky to walk into a London Drugs during a camera sale and ended up buying a cheap digital waterproof camera that was just perfect. It’s actually the camera I used for the first year of photos on this blog.

I’ve been eating a lot of takeout and easy meals this week so I don’t have to add cooking to my to-do list. There have been many grilled cheese sandwiches around these parts, especially this grilled blue cheese sandwich!

The raspberries are the star of the show here, their tart and sweet flavor punch dazzles while basil subtly sits beneath. Surprisingly, the blue cheese is also a subtle flavor as it’s offset by the mozzarella cheese. I really wanted to combine both slices of cheese in this sandwich because the melting power of Mozza is just out of this world, and who doesn’t like a grilled cheese sandwich that oozes with cheese? You’ll love how easy this meal is to throw together while you work on other, more important tasks. Like eating. Enjoy

Grilled Blue Cheese, Raspberry, and Basil Sandwich

  • 4 slices bread
  • butter*
  • 50 g (1.75 oz) mozzarella cheese
  • 50 g (1.75 oz) blue cheese
  • 1 cup raspberries


  1. Preheat a sandwich press or a cast-iron pan over medium heat.
  2. Butter one side of each piece of bread. You will be frying the buttered side. On the dry side of two pieces, divide the Mozza, blue cheese, and raspberries. Close the sandwich with the other pieces of bread.
  3. Fry for 3-4 minutes on each side, or until the cheese begins to melt. Serve.

*I never measure my butter when spreading it on bread. Seriously, just load it on.
