I’m all for the comfort-food-stretchy-pants-double-cheesy-grilled-cheese, but sometimes I just don’t wanna wear my stretchy pants. I want to squeeze into some skinny jeans until they get stuck on my calves and I can’t breathe and my sister has to help me out of them because they’re stuck on good.

But I digress. This grilled hummus and caramelized onion sandwich is the perfect way to enjoy a vegan grilled sandwich without the cheese after-effects and without any rubber vegan cheese.

It’s extremely easy, but definitely budget a bit of time to caramelize the onions. The slow cooking process magically transforms this tear-inducing vegetable into a sweet and crispy sandwich filling, pasta topper, or side.

Since caramelized onions can be used in so many dishes, you can fry up a bunch ahead of time and store them in the fridge for a few days. Then they’ll be ready to go for your grilled sandwich.

A little sprinkle of garam masala is optional but adds some depth to the sandwich and pairs nicely with the hummus. You can find garam masala at Bulk Barn or make it yourself.

Grilled Hummus and Caramelized Onion Sandwich

Add some variety to your grilled sandwiches with sweet caramelized onions and salty hummus.

Ingredients

  • 1 small white onion
  • 1-2 Tablespoons ghee, for frying*
  • 2 slices whole-grain bread
  • 2 Tablespoons hummus
  • Pinch garam masala

Instructions

  1. Add 1 TB of the ghee to a skillet and turn heat to medium.
  2. Slice the onion into thin, round slices and add to the skillet. The onions will take up most of the pan but will cook down significantly. After a few minutes on medium, turn down the heat to medium-low and continue to cook, stirring occasionally, until browned and crispy (about 25 minutes).
  3. Spread both slices of bread with a thin layer of hummus. Sprinkle the garam masala over the hummus. Add the onions to one slice and sandwich closed.
  4. If necessary, add the rest of the ghee to the skillet. Place the sandwich on the skillet and fry until golden brown and crispy, about a minute on each side. Serve immediately.

Notes
*vegans sub: coconut oil, grapeseed, canola, etc.
