Quinoa Salad with Mustard Dressing and Roasted Zucchini Coins

Do you ever wish life had a reset button? The vacuum has all the luck, with that little red button just taunting you. Oh, it stopped working? Reset. How about your iPod? It’s frozen? Reset.

Life doesn’t really work that way. That’s a  good thing. Of course, it’s easier said than done, but we should never look to the past with regrets. We should never look back at last week and wish we hadn’t eaten so many of these and these. Because we totally enjoyed them!

That being said, it’s important to be aware of what you’re putting in your body. Feel like you went a little overboard on the Easter treats? That’s okay. Chances are everyone else did too. Have some salad. Reset.

Start by roasting some zucchini coins. The warmth and flavor of the coins straight from the oven are what makes this salad pop.

Here’s a little hint: the coins aren’t just for salads. They’d make a great side dish to any meal, or a great appetizer if you stick a toothpick in them. Voila! You’re a gourmet chef.

Grab some leftover quinoa (I like it reheated warm in the microwave), or cook it up fresh. Toss in your veggies.

Use my super-simple homemade dressing trick by adding it right to the salad. Or, if you’re bringing it to work/school, just add all the dressing ingredients in a container, and shake it up and toss it on when you’re ready to eat.


Roasted Zucchini Coins & Quinoa Salad with Mustard Dressing

{Zuchinni Coins}

Total Time: 5 min

Serves: 1


  • 1 Small Italian Zucchini or about ¼ of a Large Zucchini
  • ½ tsp Olive Oil or Olive Oil Spray (I like to use this handy little gadget
  • Parmesan, to taste
  • Pepper, to taste


  1. Set oven to broil. Line a baking pan with aluminum foil
  2. Chop zucchini into ½ inch thick coins. Place on pan, and spray or drizzle with olive oil. Sprinkle on parmesan and pepper.
  3. Broil for 3-4 minutes, flip coins and broil for another minute. (cooking time is approximate- if you like your zucchini softer broil for longer if you like it more crunchy broil for less time)

Total Time: 10 minutes (includes time for zucchini coins)

Serves: 1

For the Salad:


  • ½ cup cooked quinoa
  • zucchini coins
  • 5 cherry tomatoes
  • 1 cup chopped romaine
  • 4 calamata olives


  1. Make zucchini coins. Combine with all salad ingredients.
  2. Toss with dressing. Eat, enjoy!

For the Dressing:


  • 1 Lemon Wedge
  • 1 tsp Deli-Style or Dijon Mustard
  • ½ tsp Olive Oil or Olive Oil Spray
  • ½ tsp Parmesan


  1. Add all ingredients directly to salad. Toss to combine!
