It’s not really a problem at home. My family is used to the many noises coming from my stomach. It’s when I’m in public that I get really embarrassed. The worst is when it rumbles in a quiet lecture hall filled with 200 people.
Fortunately, if I make sure to eat frequent, filling meals I can avoid this little embarrassing scenario. This sunshine bowl is just the ticket.
It’s laughably easy, with only four ingredients and five minutes of prep time. You can put it on your mental list of easy, healthy, packable lunches to enjoy on the go. And it looks so bright, it will remind you of sunny summer days.

- 15 cherry or grape tomatoes
- ¾ cup cooked chickpeas
- 1 medium avocado
- 1 tablespoon <a title=”Basil Oregano Pesto” href=”/basil-oregano-pesto/”>basil oregano pesto</a> (or other pesto)
- Slice the cherry tomatoes in half. Add them to a bowl with all other ingredients and toss to combine. Serve.
