The Sunshine Bowl is a simple, four-ingredient salad that comes together in five minutes. It’s full of fiber to help keep you feeling full throughout the day.
I swear my stomach growls so loudly when I’m hungry, it could be an instrument in an orchestra.
When it happens, I can feel it coming. It starts from deep within. I try to hide it, but it’s simply impossible. I begin to get nervous as the rumble begins, looking from side to side to see if anyone can hear it…
They turn and look with questioning eyes. My secret is out.
It’s not really a problem at home. My family is used to the many noises coming from my stomach. It’s when I’m in public that I get really embarrassed. The worst is when it rumbles in a quiet lecture hall filled with 200 people.
Fortunately, if I make sure to eat frequent, filling meals I can avoid this little embarrassing scenario. This sunshine bowl is just the ticket.
It’s laughably easy, with only four ingredients and five minutes of prep time. You can put it on your mental list of easy, healthy, packable lunches to enjoy on the go. And it looks so bright, it will remind you of sunny summer days.
So if you have stomach-growling problems like me and you’re looking for a good lunch to fill you up until dinner, this one’s for you.
