I know this title will probably attract many wary glances, but I just couldn’t resist. If you’re the type to eat plenty of fruits and veggies and a health-nut all-around, you’ve probably had the dreaded experience where a peer tells you your dish looks like something from a compost pile.
Sometimes it does. Poor veggies, they just can’t help it. I personally think vegetables are eye-candy, but sometimes when they’re blended and whizzed and roasted and toasted, they no longer resemble that “just pulled from the backyard garden” appearance.
The thing is when you add blueberries and peanut butter and spinach to a green smoothie, you’re making a risky color wheel combination. Blue + Brown + green = swamp water. No big deal. Slurp away.
I’ve been absolutely addicted to this combination the past few weeks so I figured it was high time I shared it with you. Ever since I saw this smoothie months ago, I’ve been on a peanut butter blueberry kick. It just works.
If someone comes up to you and tells you that your smoothie looks like swamp water, just tell them, “It’s MY swamp water and I like it.”
Print Swamp Water Green Smoothie Author: Katy’s Kitchen Prep time: 5 mins Total time: 5 mins Yield: 1 Ingredient
- Large handful spinach
- 1 cup almond milk (or milk of choice)
- 1 Tablespoon all-natural peanut butter
- 1 banana
- ½ cup frozen blueberries
- Add the spinach and almond milk to a blender and blend. Add all other ingredients and blend until smooth. Serve immediately.
